Guay Tiew Rad Na Moo (Stir-Fried Flat Rice Noodles with Pork in Savory Sauce)

Guay Tiew Rad Na Moo is a popular noodle dish.  The noodle for this dish is stir-fried with black sweet soy sauce.  There is a savory sauce to pour over the noodle.  The sauce consists of Chinese kale (original one) in some places it may be replaced with broccoli, carrot, cabbage or other vegetables.  It also has meat in this sauce such as pork (moo), beef, chicken, and else. This sauce is seasoned with minced garlic, fish/soy sauce, sugar, ground white pepper, vegetable oil/lard, and made thickened by using tapioca.
