Hoi Tod (Thai Style Crisp Fried Mussels Pancake)

Hoi Tod is a chinese derived dish.  The main ingredients are mussels, flours and eggs.  This dish can abundantly be found on the street.  Moreover, shops that sell this dish frequently have Pad Thai as well.  There are two Hoi Tod styles, i.e., a crispy one and a soft one.  The texture are different and the like is depend on each individual. 

Ingredients: rice flour : fried chicken batter : arrowroot flour (2:1:1), lime water (1), cold water (4-5), chopped green onion, mussels, fresh bean sprouts, chopped garlic, soy/fish sauce, ground white pepper, egg(s), and vegetable oil/lard
